Toscana

Probably the most famous of Italian regions, Tuscan food is marked by dishes of beans and meats, with fresh summer tomatoes, herbs and vegetables turning simple dishes into heavenly meals.  The heavy meats and rich sauces for pasta mean that this is not the healthy Mediterranean diet we might imagine but the Tuscans eat well using superb ingredients  in simple ways. Try the soups – Ribolitto, Pappa al Pomodoro or, if you can find it, cinestrata a broth made with Marsala thickened with beaten eggs and dusted with nutmeg and a little sugar; it may date to the Renaissance so perhaps the Medici and Michael Angelo ate it!
