Liguria has one of the most beautiful coastlines in the world, the mountainsides are covered with herbs – the flavour most assoicciated with Liguria. Rosemary, sage, thyme, marjoram plus of course BASIL.
Because a large proportion of the male population were sailors and spent many months at sea, they did not particularly want fish, which had been their staple while at sea, when they returned home. The overpowering smell of the spices they carried would be constantly with them unlike the Venetions they did not follow the coasts but were far out to sea.; what they craved when they returned home was the fresh taste of herbs – perhaps their bodies were telling them they needed the minerals and vitamins contained in them after long months st sea.
