The begining of  ‘the south’ the Mezzogiorno, it is a different world to the north, warm, passionate, generous, steeped in religion and superstition, centred on the family and tradition.  Bacause it was unified under the same rulers – colonised by the ancient Greeks, then part of the Roman and Byzantine empires, dominated by the Normans, Angevins and the Argonese the regions of the south are more homogeneous compared with the rest of Italy.

It is this region’s foof most of us think about when we talk about Italian cuisine – Pizza, dried pasta with tomato sauce, caprese salad and tomatoes full of flavour (they can grow 4 crops a year here on the rich volcanic soil under the shadow of Vesuvius.
