Calabria

As in much of mainland southern Italy, the cuisine of Calabria is one born in kitchens that had few available ingredients, yet they were used resourcefully.  Pasta with vegetables is the staple with peperoncino (chilli) being the dominant flavour. The toe of the Italian boot with a long coastline that was for much of its history uninhabited.
