Aglio, olio and Peperoncino (garlic, oil and chili)

Here’s another quick, simple dish you can make in less than the time it takes to cook the pasta.

Chop a fresh garlic (as you can see in the photo, fresh garlic looks like a spring onion; the bulb has not yet formed).  Add a red chili to the garlic and gently heat both in good olive oil. Cook some spaghetti, drain and add to the garlic. Add a little cooking water if necessary to make a bit of sauce.  Serve with fresh Parmegiano Reggiano.
